Abstract
The Author reports on the chapter ''Nutrition'' in the Human Physiology textbook by P. Albertoni and A. Stefani published in the first half of the 19th century. This is one of the first textbooks that treats Psysiology as an experimental science in contrast with the thinking of the previous century which was still dominated by Galen and Dioscorides.
